Asparagus and Pancetta Frittata brings together three complementary ingredients—eggs, asparagus and cured pork—beautifully. Like any frittata, Asparagus and Italian Bacon Frittata is a great choice for a spur of the moment meal, served in big wedges. It can also be left to cool and cut into. - Peel and chop potatoes, dry well, drizzle with olive oil, sprinkle with salt and oregano, pop in the oven at 200, will take about 45 mins to cook, shake a few times during cooking. Meanwhile... Prep the cheese, asparagus and pancetta.

Heat olive oil in a medium skillet over medium heat. Reduce the heat to low and pour the egg mixture into the skillet. Cook, giving the eggs a few stirs in the beginning to distribute the asparagus, until the eggs are well set and slightly puffed around the edges but are still.
